Simplified Butternut Squash Soup for that Last Minute Meal


  • 1 packet Straight from the Root Sous Vide Organic Butternut Squash 
  • 1/2 can coconut milk
  • 2 cups low sodium vegetable broth
  • 1/2 sautéed onion
  • 1 tbsp olive oil
  • 1 clove of garlic 
  • 3 tbsp red curry paste
  • salt & pepper to taste


  • Sautee onion and garlic in olive oil until cooked down.
  • Heat the packet of Straight from the Root Sous Vide Organic Butternut Squash for 60-90 seconds in the microwave or in a pot of hot water.
  • Open the packet and pour warm butternut squash and sautéed onion and garlic in a blender.
  • Add vegetable broth, red curry paste, coconut milk, and salt and pepper in the blender.
  • Blend until smooth.
  • Top with a drizzle of coconut milk and some chopped cilantro.
