- 1 packet Straight from the Root Sous Vide Organic Butternut Squash
- 1/2 can coconut milk
- 2 cups low sodium vegetable broth
- 1/2 sautéed onion
- 1 tbsp olive oil
- 1 clove of garlic
- 3 tbsp red curry paste
- salt & pepper to taste
- Sautee onion and garlic in olive oil until cooked down.
- Heat the packet of Straight from the Root Sous Vide Organic Butternut Squash for 60-90 seconds in the microwave or in a pot of hot water.
- Open the packet and pour warm butternut squash and sautéed onion and garlic in a blender.
- Add vegetable broth, red curry paste, coconut milk, and salt and pepper in the blender.
- Blend until smooth.
- Top with a drizzle of coconut milk and some chopped cilantro.
