Sous Vide to the Rescue: Last Minute Beet & Sweet Potato Salad

 

SALAD INGREDIENTS 

  • 3 cups organic baby spinach
  • 1 packet Straight from the Root Sous Vide Organic Red Beets
  • 1 packet Straight from the Root Sous Vide Organic Butternut Squash
  • 1/2 cup sautéed brussels sprouts
  • 1/4 cup candied walnuts
  • 1/4 cup dried cranberries 
  • 1/4 cup crumbled goat cheese

DRESSING INGREDIENTS 

  • 1/3 cup extra virgin olive oil
  • 1 tbsp apple cider vinegar
  • 2 tbsp dijon mustard
  • 1 tbsp honey
  • salt & pepper to taste

DIRECTIONS

  • Assemble all salad ingredients on a plate or in a bowl
  • Blend all dressing ingredients and pour over salad
