Sous Vide Parsnip and Leek Soup: Quick & Easy

INGREDIENTS

DIRECTIONS

  • Sautee leeks and garlic in 1 tbsp of extra virgin olive oil
  • Heat Straight from The Root sous vide organic parsnips for 60-90 seconds in a microwave or a pot of hot water
  • Add all ingredients, including heated parsnips and sautéed leeks and garlic into a blender.
  • Blend until smooth. 
  • Top with a drizzle of remaining extra virgin olive oil and chopped parsley
